The viscosity of the aqueous solution is very low, and the viscosity value changes little with shear rate and temperature, no precipitation occurs for a long time, and the characteristics of osmotic pressure, freezing point, etc. are roughly consistent with those of maltodextrin with the same DE (saccharification rate) value of 10-12. Resistant dextrin has a well-developed branched structure, is not easy to age, is heat-resistant, acid-resistant, and resistant to freezing and refrigeration, and has low calories. It can be used as a low-calorie soluble food raw material. Application fields: At present, resistant dextrin is mainly used in the food field. It has the same powdery properties and processing adaptability as sugar and is easy to use. It has low viscosity and sweetness, and good acid and heat resistance. It can be used in health products, dairy products, flour products, meat products and infant foods.
