Erythorbic acid is a white to pale yellow crystal or crystalline powder. Odorless, sour. Gradually darkens in light. Fairly stable in air and in a dry state. However, it deteriorates rapidly in solution and in the presence of air. Melt and decompose at 164-172°C. This product is an isomer of ascorbic acid with similar chemical properties to ascorbic acid, but a few do not have the physiologically active effect of ascorbic acid (only about 1/20). Antioxidant is better than ascorbic acid and is cheaper, but it has poor heat resistance. It has strong reductivity, and slowly colores and decomposes when exposed to light. Heavy metal ions promote their decomposition. Highly soluble in water (40g/100m1). Soluble in ethanol (5g/100ml). Insoluble in glycerol. Insoluble in ether and benzene.
